Hello! Weekends are for baking sweet treats. It’s funny though, these mini coffee chocolate cupcakes all started with me wanting to have a nice cup of coffee and a chocolate cake. However, since I’d just drank tea, I decided a coffee right after it might be too much. That still left the cake part, though. And when I started making the cupcakes, I added a tiny bit of coffee powder just for the fun of it- and it was absolutely beautiful! Like seriously, these cupcakes are just that good- especially because I was secretly craving for a coffee and cake combo. We’re talking mini cupcakes here, because I used the tiniest cupcake moulds. It worked out really good because these are small bites which you don’t easily eat too much of. I’m saying this because I know there are many people (like me) who have a small weakness to anything chocolate/coffee related. Unless, you’re the only one there with a whole tray of these. If there are other people around (my situation), they won’t stay on the plate for too long.

Adding walnuts to the plate is a good way to cram something healthy. I really like walnuts with coffee. Actually, I think I like walnuts with everything. That’s just me..

If you don’t like walnuts though, you can totally add any garnish you want- raisins, cherries, a dollop of cream (oh! I totally should have done that- next time), grated chocolate or anything like that, really.

Or you can just eat ’em without garnish. They still taste just as good..

The dusted sugar just adds to the magic of these cupcakes. In fact, as I’m typing this- they are starting to remind me of Christmas. Already?

Chocolate Coffee Cupcakes
A scrumptious chocolate cupcake with that subtle flavour of coffee! If you need your chocolate and coffee fix at the same time- try your hand at these simply yummy cupcakes! Also, this is eggless and still retains the fluffy cupcake quality! Must try in the kitchen!

Ingredients
  1. All purpose Flour– 1 cup
  2. Baking powder – 1 teaspoon
  3. Baking soda – 1 teaspoon
  4. Cocoa powder – 6 tablespoons
  5. Chocolate Cooking bar- broken in chunks- 1
  6. Butter - ½ cup
  7. Yoghurt - ¾ cup
  8. Finely powdered Sugar - ¾ cup
  9. Milk - 1 cup
  10. Coffee powder -1 teaspoon (add 1 tsp more if you want a larger essence of coffee)
  11. Salt - a pinch
Instructions
  1. Preheat oven to 180 degrees C.
  2. Mix all the dry ingredients- white flour, baking powder, baking soda, cocoa powder and a pinch of salt.
  3. Melt the chunks of chocolate over the stove. Mix well until consistent. Let it cool.
  4. Mix coffee powder and milk.
  5. Beat the butter, sugar and yoghurt till creamy. Add this to the coffee milk mix. You have your 'wet' ingredients.
  6. Mix the dry and wet ingredients well. You've got your cupcake batter.
  7. Grease and flour cupcake moulds with butter. Pour the batter made in the previous step.
  8. Set them on a baking tray and bake for 15-20 minutes.
Notes
  1. Serve with sprinkled fine sugar and walnuts for garnish. After all, what's a nicer combination than walnuts, coffee and chocolate?
