Hello! I’ve been thinking lately about..snacks. I’m a big fan of snacking and I bet you are too. However, the only catch is, I really like yummy snacks. And most of what’s yummy, doesn’t really classify as ‘easy’ and ‘quick to make’ all the time. I mean, some people call a piece of toast or biscuits as a ‘good’ snack when you really don’t have the time to whip up something good. I disagree. I need something that really makes a ‘good’ snack. And I’m happy to say that I found a pretty nice snack- you can eat it anytime, anywhere and it’s delicious and filling. Plus: it’s healthy. And did I mention, I love colourful food? Well, this fresh corn summer salad (snack) is pretty colourful too!So many colours: reds, pale pink, lemon yellow, deep green, a sprinkling of cheese and a squeeze of lemon juice. Not to mention, a lovely hint of olive oil.Mix it all up and you’re good to go.
Serve in colourful bowls!
It’s not only just salad! Get some salty crackers and sprinkle some salad and cheese on it. Makes for a lovely small bite.
The crackers are specially yum, just remember to make them when you want to eat them, otherwise they’ll get a bit soggy if you leave them for too long.
Feel free to add anything you like to the salad: you can switch red peppers for the green shown here; add jalapenos even (!), olives, fruit chunks, cucumbers, a dash of vinegar. Just start with the corn and let the dish develop on its own (depending on what you have in the fridge!)
I used red chilli powder and not just the regular pepper. And trust me, the chilli is what gives this salad that pop in taste. It’s so flavourful and adds that needed zing. Ditch the pepper. You’ll learn to love chilli. And here’s a fun fact: chilli powder (and all chillies) do not upset your stomach! In fact, they relax the system and help in digestion! So don’t turn away from chilli..it’s spicy, delicious and really healthy for you too!
This salad is really perfect for any age: perfect for kids as an after school snack, and perfect for anyone else who just wants something yum to eat in front of the telly.
- 1 Green Pepper
- Boiled Corn (I used tinned corn)
- 1 Tomato
- Grated Cheese
- 1 Onion
- Red Chilli Powder (add according to your preference)
- Salt (to your preference)
- Freshly squeezed lemon juice ( 1 tablespoon)
- Olive Oil (2 teaspoons- optional)
- Chop the tomato, onion, green pepper. Put in a salad bowl.
- Add corn, chilli powder, salt and olive oil.
- Mix well. Voila!
- This fresh corn salad can be added on top of salty crackers for smaller bites and appetizers at parties or just anytime!
